Low-FODMAP Hemp Milk and Feta Cheese (dairy free)

I consider hemp seeds to be one of my top low-FODMAP superfoods.  They are a delicious, nutty tasting seed that provides a hefty dose of protein, all 20 essential amino acids, and an decent amount of 1,000 mg of omega-3 fats (in 1 Tablespoon) and GLA which can reduce inflammation.  They are also easy to digest and if you have a cow’s milk sensitivity, or just looking for alternatives, hemp can be made into milk, cream and cheese.

Hemp milk is perfect to use in smoothies, add to coffee or use in making Hemp Feta cheese, which can be used in any recipe calling for a soft cheese, even lasagna.

Hemp Milk

1/4 cup of hemp seeds
2 cups of water
optional: pinch of cinnamon or 1/2 tsp vanilla powder

Place all ingredients in high power blender and blend for 1-2 minutes until frothy and white.

Hemp Feta Cheese

1 cup of hemp seeds
2 tsp. garlic oil
3 TBS. lemon juice, fresh squeezed
2 TBS. hemp milk of almond milk
1/2 tsp. salt

In a food processor add the hemp seeds.  Turn on and let the hemp seeds whirl around for a few seconds.  Slowly add the remaining ingredients through the top until crumbly.  If needed add a splash more of garlic oil or lemon juice.
